Bush Food Scones

Scones Recipe

Ingredients

  • 2 cups self-raising flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, chopped
  • 1/2 cup macadamia nuts, chopped
  • 1/4 cup dried bush berries (such as muntries or Kakadu plum)
  • 3/4 cup milk
  • 1 egg (for egg wash)
  • Additional flour for dusting

Directions

  1. Preheat the Oven: Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, sift the self-raising flour. Add sugar and salt, and mix well.
  3. Add Butter: Add the cold chopped butter to the flour mixture. Use your fingertips to rub the butter into the flour until the mixture resembles fine breadcrumbs.
  4. Add Nuts and Berries: Stir in the chopped macadamia nuts and dried bush berries.
  5. Add Milk: Make a well in the center of the mixture and pour in the milk. Mix gently with a knife until the dough just comes together.
  6. Form Scones: Turn the dough out onto a lightly floured surface. Knead lightly until smooth. Pat the dough down to a thickness of about 2 cm. Use a round cutter to cut out scones. Avoid twisting the cutter to ensure a straight rise.
  7. Prepare for Baking: Place the scones on the prepared baking tray. Lightly beat the egg and brush the tops of the scones for a golden finish.
  8. Bake: Bake in the preheated oven for about 12-15 minutes or until golden and risen. The scones should sound hollow when tapped on the bottom.

Serving

Serve warm with butter, native jam, or honey. Enjoy your bush food scones with a cup of tea or as part of a special afternoon snack!
